Joe Michael Ramirez in his many travels all over Mexico,
found a plate that upon completion realized; it belongs in Los Lupes almanac,
and has brought it for Texans and for people all over the world to taste and
admire the Molcajete Majestic Simplicity, noble in its service and warm of
heart at the same time, its richness goes back to the days when conquistadors
ware impressed by its flavor beyond words!
The Molcajete is a
vessel made from lava rock, its porosity holds flavor magically from within, and
the food that it holds is maintained hot throughout your meal. Be careful, it
is served hot; bubbling with excitement. Beef and chicken fajita atop a bed of
salsa made in the Molcajete (the original way!) served with bubbling Monterey
cheese and nopales (cactus) and grilled shrimp. It is a vista and a feat hard
to top!
Coco Peralta has made it his mission to have a Molcajete at
every table; is his way of saying
Come… let’s break bread… The Mexican way!
